Continuity

When Val, Rhonda and Earl flee the second graboid by climbing onto a rock, Val is wearing cowboy boots. When the camera cuts to the rock and Val climbs to the top, he's wearing leather workboots. After they wake up the next day and Val slides down the rock to see if the graboid is still there, he is again wearing cowboy boots.

When Earl goes to where Rhonda found the pole-vaulting sticks, two of them are conveniently placed right next to the rock, but when Rhonda first took a stick, they were in a random place farther from the rock. Further, the poles grow in length from the time they are picked up by Earl until the long shot of them being used.

When she is shown from the back, leaning off the rock to pick up the pole, the backpack is full.

When Burt and Heather are being attacked in their rec room and Heather is grabbing another weapon off the wall there are two pistols hanging near her right shoulder. While the ground is shaking, the top one can be seen falling off it's pegs but when the scene flashes back to Heather only one or two seconds later, it's back on the pegs.

Factual errors

Neither Burt nor Heather were wearing any sort of hearing protection during their shootout in the basement. They would be completely deaf at that point.

Incorrectly regarded as goofs

Many times during the movie someone will make a noise close to the ground and nothing tries to eat them. However, there are only four of the creatures and it is a big valley. Just because someone is making noise does not mean a creature will immediately appear and try to eat them. They may be off eating Miguel's cattle or in some other location in the valley too far to get there in time.

When they are on the roof talking on the CB radio, they manage to use a base station unit without a power cord connection. Many CB radio bases are powered by batteries. Apparently, this is one of them. Even if that particular model was designed to be AC-powered, Walter could later have had it customized for DC power.

When the tractor 'decoy' is deployed, there are only two Graboids left in the valley and both are clearly chasing the tractor (Nancy even states: "This one's going too!"), yet there seems to be a third Graboid still stalking Burt's compound outside the town. However, in an earlier scene it takes a Graboid 1.5 minutes to go from Walter's store to Burt's basement. The tractor scene starts at least 2 minutes (could be several minutes longer because there is a scene cut in the middle) after the last sighting of the creature near the compound (when it destroyed Burt's truck), so it had more than enough time to get back to the town. It makes perfect sense for it to return, by the way - it clearly realized that humans won't be able to escape without the truck so there is no need to stay put.

When Rhonda is running into the store from the Graboid (after losing her pants), her ankles have no visible cuts, but when she is in there, her ankles have multiple blood trails. However, if cuts aren't deep and don't damage any significant blood vessel, it can take a little while until blood comes out. If the cuts were mostly caused by taking off the pants, it's plausible that they weren't visible for the next 15 seconds that passed until Rhonda ran inside.

Water that falls in the bulldozer scoop disappears later. This is because Val lowers the scoop right after Rhonda climbs out of it (the scoop is seen in its lowered state when bulldozer starts moving again) and all the water gets out. In any case, the amount of water that entered the scoop was very small to begin with.

When Melvin comes out of the shop screaming, he has a Graboid tentacle around his neck, which seems very flexible, even though it's been ripped off 12-14 hours earlier and the rigor mortis should have set in by then (in humans under typical conditions it takes 4-10 hours). However, rigor mortis progression depends on many factors, including animal physiology and ambient temperature. In a cold environment it could take days even in humans, and it is highly plausible that Walter kept the tentacle in a refrigerator most of that time. Moreover, Graboids are extremely unusual creatures with weird biology, so human standards don't have to apply.

When old Fred is tending his garden, there is a blue car parked between the garden and his shack. Later, when Val and Earl arrive and look for Fred, the car is gone. However, graboids are notorious for pulling cars under the ground, so this disappearance should not come as a surprise.

When Burt and Heather are in their basement looking out the window for the Graboid, before it breaks through their wall, you can see Cedar / Pine trees outside their windows. In the next shot when it shows an outside view of their house, you can see they are on a hill with no trees around. There are no cedar / mountainous trees on their property or in the valley. Clearly shows the scene was filmed elsewhere / on a sound stage.

Spoilers

The goof items below may give away important plot points.

Continuity

When Burt uses the elephant gun to kill the Graboid, it is clearly extremely heavy. Later when Burt passes down the same gun to Miguel, he takes it by the butt with only one hand.

Near the end, when the three run for the cliff, when Valentine McKee (Kevin Bacon) first starts moving you can see the platform that he is standing on that is buried under the sand (probably covering the worm mechanism that surfaces just beside him) shift as he moves. It's just the size of a sheet of plywood, and the moving dust shows its outline.

Incorrectly regarded as goofs

Near the end of the movie, when the Graboid falls out of the cliff, Val says "Can you fly, you sucker?", but if you look at his mouth, he is clearly saying ruder. This is not a mistake, but a deliberate overdubbing, required to avoid the R-rating (see Trivia).

When the Graboid comes up through the floor, Walter starts bleeding from his nose before it grabbed him. Walter is bleeding not because the creature grabbed him, but because he was flung face first into the refrigerator box when the Graboid blasted the floor (it's easy to miss, but it can be seen for a split second). Indeed, it makes no sense for Walter to get a nosebleed from being grabbed by his back.

When even a single bomb is detonated, Graboids are hurt by the sound and must flee, making a squeal and leaving a dust trail. It is also stated that the rocks amplify sounds of things on top of them. But in the final scenes when everyone is stuck on the rock, trying to 'fish' for the final Graboid, all but one of the remaining bombs are detonated on top of the rock, resulting in the biggest explosion in the film, however this time it doesn't seem to have the same effect on the Graboid. This is because that particular Graboid got smart and threw the bomb at the rock from a significant distance (all other bombs were detonated in a very close proximity to the Graboids), and probably got even further away before the bombs started to explode (and then circled back). It may also be the case that it did squeal in pain, but the explosions obscured that sound.

When Burt has just killed the Graboid that came into his bunker, Val congratulates him, and then says "be advised however, there are 2 more, repeat 2 more motherhumpers. The audio says "motherhumpers", but his mouth forms the word "motherf*****s". This must have been a production error, because it is present in all versions of the movie, DVD, VHS or otherwise. It is not a production error, as stated in the Trivia section above, the film was edited for language so that it would have a lower rating.

Revealing mistakes

When Burt and Heather are being attacked in their basement by one of the creatures, Burt breaks the glass of the display case and loads an extremely powerful 8-gauge "elephant" gun. He then takes aim and fires twice, eventually killing the monster. The problem is that when preparing to fire, he puts the butt of the gun UNDER his arm and not against his shoulder where it has to be in order to fire effectively. Had that been a real gun of such a size and caliber, the recoil would have, at the very least, launched the gun backwards under his arm, and in a worse case scenario, either had the barrel of the gun strike him in the face because of the downward angle of the butt or had his wrist broken as the gun would have moved faster than the physical reaction needed in order to get his finger out of the finger guard.
